This is what makes us different. We
smoke our own meats and we love what we do. We're a small operation
making quality meat products. We believe that this part of the old
fashion meat market should be resurrected.
The process of smoking meat has been around for centuries. Over the
years, meat lovers have found ways to enhance the flavor of the meat
with spices, through rubs and marination, followed by a drying or
smoking process that cures the meat. The settlers and cowboys used
to rely on dried meat for nourishment while traveling across country
for days or even weeks at a time. With
the help of modern
technology, this survival food of yesterday has become the ultimate
protein snack. We use carefully selected spices to make all our
products. Our jerky starts with
fresh, thin sliced beef, mixed with our own secret recipe of spices,
etc. and then run through a pressurized tumbling process that
infuses the meat with flavor. The meat is then laid out on racks and
placed in the smoke house. The smoke house uses water for moisture,
fans for drying, a special blend of wood chips for smoke, and a
micro processor that coordinates all of these components to create
the perfect processing mixture combined with proper time and
temperatures. We also smoke sausage, snack sticks, bacon, hams,
poultry and more.
